🌾 Dry Ingredients

  • 200g oat flour or wholemeal flour

  • 1 tbsp ground flax or chia

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ -1 tsp cinnamon

  • Pinch of salt


🍓 Wet Ingredients

  • 180g stoned, soft medjool dates

  • 150g unsweetened apple purée (bought or homemade)

  • 5tbs plant-based milk

  • 3 tbsp maple syrup

  • 2 tbsp almond butter (or tahini)

  • 1 tbsp coconut oil

  • 1 tsp vanilla essence

  • 200g frozen raspberries (or other berries)


👩‍🍳 Method

  1. Preheat oven to 175°C and line a muffin tray with cases or use silicone moulds.

  2. In a large bowl, combine all the dry ingredients

  3. Blend the dates with the apple purée, milk, syrup, nut butter, oil and vanilla until smooth.

  4. Pour in the wet mixture and stir until just combined.

  5. Fold through the raspberries gently.

  6. Spoon the mixture into cases and bake for 20 minutes until golden and firm to touch.

  7. Cool, breathe in that amazing aroma, and enjoy warm or chilled!
